This is the mini version of my Orzo-Stuffed Peppers. Just the right size for merenda (snack). Serve them as a delicious first course or bring a tray of peppers to a cocktail party and watch them disappear (use red, green, yellow and orange peppers for a colorful presentation). Mini-stuffed peppers are a welcome addition to any backyard barbeque or potluck. Orzo pasta, eggplant, tomatoes and mozzarella are combined to form one flavor-packed small bite.
For this recipe, go to Orzo-Stuffed Peppers. I served the peppers in Chinese soup spoons (as you can see in the photo) as part of a buffet. Guests took one (with the spoon) and put it on their plate. Although the pepper is small, ( it’s more than one bite) it needs room to be cut into and a plate to catch the yummy stuffing.
