Mini Italian Sausage-Stuffed Peppers

 

A sandwich of Italian sausage, onions and peppers is typical street food of my beloved Sicily. I have served and eaten it on many occasions, from various local and regional Italian Festas (festivals) to football parties and BBQ’s. Herein lies the dilemma, what to do when this is the main event at your gathering and some of your guests don’t eat grains? The solution is to make these mini peppers (a smaller version of my Italian Sausage and Peppers). Now for those who are abstaining from bread, no problem, this darling little pepper is good all by itself, and for those party goers salivating for the traditional sandwich filled with the delicious caramel sweetness of onions and peppers, serve them with fresh rolls. Each person takes a roll (that’s been sliced not quite all the way through), allowing a pepper containing all the necessary ingredients, to be tucked neatly inside the roll and presto, an  Italian sausage and pepper sandwich!

 

Ingredients:

Make the recipe of Italian Sausage and Peppers, using the one green pepper called for in the stuffing, and substituting the mini peppers for the larger ones.
Also, no marinara sauce is used in the sandwich.
You just might be surprised at what a big hit this is, I think it’s because it’s so unexpected (and a nice change from a cold-cut plate).
