A frozen version of my favorite coffee drink is nothing more than accidental genius.
Accidental is the operative word here. I was making several batches of flavored ice cubes (Creamy Milk Cubes, Chocolate Espresso Cubes ) to have on hand for ice coffee drinks. By the time I made my Sweet Cappuccino Cubes there were no more ice cube trays. So, I started filling Popsicle molds.
There you have it, necessity really is the mother of invention! Would I enjoy this on a hot summer morning you might ask … just did. I also find Ricotta al Cafe quite satisfying for a simple (no cooking required) morning meal. But my favorite Sicilian summer breakfast is the traditional Granita di Cafe eaten with a warm brioscia (similar to a French brioche).
Ingredients:
- 4 cups coffee, strong fresh brewed, room temperature
- 1 (14-ounce) can sweetened condensed milk
- In a blender, combine the coffee and sweetened condensed milk, blend until smooth. Pour into Popsicle molds. Freeze until solid.
- To remove your cappuccini on sticks, dip the molds in hot water for a just a few seconds. Consume with youthful enthusiasm!
