Broccoli Rabe Bruschette

Bruschetta is the perfect small bite. It can be sweet (blackberry breakfast bruschetta), savory (tuna bruschetta), or a little bit of both (jam-y fig & ricotta bruschetta with crispy prosciutto). 

Quite often, the ‘small’ bite is so delicious that I make it larger and turn it into a meal. This healthy and delicious recipe is a favorite of my husband’s particularly, before or after a workout.

Ingredients:

Toast or grill both sides of bread, drizzle with olive oil and a sprinkling of coarse salt. Smear ricotta over the toast and top with roasted rapini. a final drizzle of olive completes this tasty dish.
